Tofu Spinach Parmesan Recipe
A wonderful way to eat tofu. This is a great veggie alternative. This recipe was given to me by one of my cooking students. His mom was ahead of her time.

Ingredients
  • 1 pkg of firm tofu, well drained
  • 1/2 lb. fresh mozzarella, sliced into 8 slices
  • 1 bag fresh spinach / I like the baby spinach
  • 2 cups spaghetti sauce
  • 2 eggs
  • 3/4 seasoned bread crumbs
  • olive oil as needed
  • salt to taste

Directions
  1. Cut the tofu into 8 slices.
  2. Beat eggs...dip tofu into egg, then into breadcrumbs.
  3. Saute in olive oil until brown on both sides.
  4. Pour about 1/3 of the sauce into a casserole dish and place the breaded tofu on top. Set aside.
  5. Wash spinach well and steam ever so slightly (just wilting).
  6. Drain well and place an even amount on each piece of tofu.
  7. Place a slice of mozzarella on each each stack.
  8. Cover with the rest of the sauce and bake at 350 degrees for 45 minutes or until bubbling
  9. You can substitute eggplant or chicken in this recipe.

I usually cook Tofu with garlic, soy sauce and green onion!
