A quick fish prep that the result far exceeds the parts. It is so delightful and a buerre noisette has nothing on Grandma's butter nutmeg sauce.

Ingredients
  • 3 tbsp of sweet butter
  • tilapia fish fillets, two per person
  • 1/3 cup of softened butter
  • 2 tbsp of fresh lemon juice
  • 1 tsp of fresh nutmeg

Directions
  1. Heat butter in hot skillet (the three tbsp).
  2. Add fish fillets.
  3. When brown on one side, turn and add the remaining butter, lemon juice and nutmeg.
  4. Brown and serve on a deep platter with the pan sauce poured over top.
