Ingredients

How to make it

  • Peel eggplant, cut into 1/2 inch slices.
  • Combine cheese, eggs, parsley, garlic ,salt and pepper.
  • Dip into cheese mixture and into bread crumbs.
  • Brown quickly on both side; drain on paper towel.
  • Place layer of sauce in 1 qt baking dish; add eggplant.
  • Repeat layers.
  • Bake at 375 degrees for 30 minutes.
