Italian Eggplant Parmesan Recipe
This compliments any meat dish.

Ingredients
  • 1 medium eggplant
  • 2 tablespoons grated parmesan cheese
  • 2 eggs
  • 1 teaspoon parsley flakes
  • 1 clove of garlic, crushed
  • salt and pepper to taste
  • bread crumbs
  • 1 cup speghetti sauce

Directions
  1. Peel eggplant, cut into 1/2 inch slices.
  2. Combine cheese, eggs, parsley, garlic ,salt and pepper.
  3. Dip into cheese mixture and into bread crumbs.
  4. Brown quickly on both side; drain on paper towel.
  5. Place layer of sauce in 1 qt baking dish; add eggplant.
  6. Repeat layers.
  7. Bake at 375 degrees for 30 minutes.
