Italian Eggplant Parmesan

- 1 medium eggplant shopping list
- 2 tablespoons grated parmesan cheese shopping list
- 2 eggs shopping list
- 1 teaspoon parsley flakes shopping list
- 1 clove of garlic, crushed shopping list
- salt and pepper to taste shopping list
- bread crumbs shopping list
- 1 cup speghetti sauce shopping list
How to make it
- Peel eggplant, cut into 1/2 inch slices.
- Combine cheese, eggs, parsley, garlic ,salt and pepper.
- Dip into cheese mixture and into bread crumbs.
- Brown quickly on both side; drain on paper towel.
- Place layer of sauce in 1 qt baking dish; add eggplant.
- Repeat layers.
- Bake at 375 degrees for 30 minutes.
