Southern Fried Chicken

- 1 3-31\2 lbs. frying chicken (cut into 8 piece cut) shopping list
- salt and pepper to taste shopping list
- Crisco shortening (enough to cover the chicken pieces in a large skillet) shopping list
- 2 cups flour shopping list
- Small brown paper bag shopping list
How to make it
- Heat the Crisco (i know i know but you need this for the best Fried Chicken) to 375 (i never use a thermometer but i think that would work )in a large heavy skillet. Make sure you have enough to just cover the Chicken pieces.
- Wash the Chickens pieces thoroughly in cold water.Leave the Chicken pieces in cold water.
- Add the flour,salt and pepper to the brown paper sack (i taste the mixture for the correct taste)
- Immediately take the Chicken pieces from the cold water and place in the brown paper bag shake well to coat the pieces
- Here is where the trick comes in that makes this so good. Place the Chicken pieces thighs,legs,breasts wings in that order into the Crisco and as soon as the last piece is in make sure the pieces are seperated after one minute of cooking and place a tight fitting lid on the skillet.
- DO NOT RAISE THE LID for 14 minutes if you do this recipe will not give you the results you are looking for! Remove the pieces to a paper towel lined plate to drain and serve . Enjoy!!!

Southern fried chicken is the best! My favorite, and this is a wonderful way to cook it! Crisco is my choice ALWAYS. :)
