Ingredients

1 English cucumber,sliced in rounds

1(12oz) can mandarin oranges,drained

1/4c fresh mint leaves

1Tbs sherry vinegar

2tsp olive oilsalt and ground pepper

Directions

In a largebowl,combine cucumber,oranges,mint ,vinegar and oil. Toss to combine. Season,to taste,with salt and black pepper.
