MINI CHEDDAR MEATLOAVES

- 1 1/2 pound lean ground beef shopping list
- 1 egg shopping list
- 1/2 cup chopped onion shopping list
- 1 8oz package of cream cheese, softened shopping list
- 1 cup sharp cheddar, shredded shopping list
- 1 cup monterey jack, shredded shopping list
- 6 strips bacon, cooked, drained and crumbled (can omit) shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp garlic powder shopping list
- 1/4 tsp chili powder shopping list
- 1/2 cup crushed cheese crackers (I use Cheezits) shopping list
- 2/3 cup ketchup shopping list
- 1/2 cup brown sugar shopping list
- 1 1/2 tsp dry mustard shopping list
- 1/2 tsp Worcestershire shopping list
How to make it
- Mix together all of the cheeses, bacon crumbles, salt, garlic powder, and chili powder.
- Set aside.
- Preheat oven to 350 degrees.
- Grease muffin tin tray, regular size not mini muffin
- Mix together ground beef, egg and onion.
- Fold in cheese mixture and crushed cheese crackers.
- I mix everything together with my hands, form into palm size balls and place in muffin tins. I suppose this could be done with an ice cream scoop, but getting messy is half the fun!
- Combine ketchup, brown sugar, dry mustard and Worcestershire together on the stovetop on medium heat until sugar and mustard have dissolved.
- Cover each meatloaf with glaze and bake for 45 minutes uncovered.
- Options: You can add chopped green peppers to the meat mixture;
- quick oats instead of cheezits.

I love meatloaf but my husband doesn't, every once in a while I try a new recipe to see if he has changed his mind (so I can make it more often)... I think this recipe sounds delicious.
