Ingredients
  • 3 1/2 c sifted powdered sugar
  • 3 oz vegan cream cheese
  • 1 tsp vanilla
  • 1 1/2 c shredded, sweetened coconut
  • 1 c slivered almonds, toasted and coarsely crushed
  • 12 oz semisweet chocolate chips

Directions
  1. In a medium bowl, combine sugar, cream cheese, and vanilla. Stir in the coconut.
  2. Shape into 1-inch balls. Place balls on baking sheet lined with parchment and let stand at room temperature for 1 hr.
  3. Place crushed almonds in shallow bowl and set aside.
  4. Melt chocolate in double broiler until smooth. Allow to cool, then dip each ball into chocolate to coat.
  5. Roll in crushed almonds.
  6. Place back on baking sheet, let sit 1 hr. Place candies in airtight container and store in fridge.
  7. Allow to sit at room temperature for 2 hrs before serving.
