Very easy for teens to make; Original name was Almond Butter Crunch Wheels. It's supposed to turn out just like peanut brittle, but I always manage to end up with a softer version. Very chewy and cannot stop eating it!

Ingredients
  • Extra butter, set aside
  • 1 cup blanched slivered almonds (or sliced almonds)
  • 1/2 cup butter (not margarine)
  • 1/2 cup sugar
  • 1 tbsp. light corn syrup
  • OPTIONS: I've used mixed nuts, cocoanut, mixed dried fruit in various combinations. It's all good.

Directions
  1. Line bottom and side of an 8" or 9" cake pan with aluminum foil (do not use plastic wrap or wax paper).
  2. Butter foil heavily and set pan aside.
  3. Combine almonds, butter, sugar and corn syrup in a 10" skillet.
  4. Bring to a boild over medium heat, stirring constantly.
  5. Continue to boil & stir constantly, until mixture turns golden brown (about 5-6 minutes).
  6. Working quickly, pour and spread candy evenly in prepared pan.
  7. Cool about 15 minutes, or until firm.
  8. Remove candy from pany by lifting edges of foil, peeling off foil. Cool thoroughly.
  9. If giving as a gift, it can be presented as a full disk or broken into pieces.
  10. Makes about 3/4 pound.
