How to make it

  • Beat cream cheese and sugar until smooth; add eggs one at a time beating well after each addition. Mix in orange juice and zest.
  • Pour into prepared crust. Bake at 350F for 35-40mins or until set but still still slightly jiggly. Cool to room temperature, cover and chill.
  • Arrange strawberries decoratively over top of pie.
  • Mix orange juice, water, sugar and cornstarch in small saucepan. Cook until thickened and clear, cool slightly then brush carefully over berries.
  • Chill at least 2 hours.
  • Serve with sweetened cream and a few mint sprigs.
