Great warm or cold, tastes fresh just like it came straight from the deli. I usually leave out the grapes for chopped sundried tomatoes though. I'm not a fan of fruit in my ''meat'', unlike everyone else I know.

Ingredients
  • 2 c vegan chicken tenders (If you live in Canada, Superstore's PC's brand are amazing)
  • 1/2 c diced celery
  • 15 - 20 thinly sliced grapes
  • 1/4 c slivered almonds
  • pinch of baby dill
  • salt and pepper to taste
  • 4 heaping tablespoons of Veganaise or other egg-free mayonnaise

Directions
  1. Fry chicken tenders until golden.
  2. Toast slivered almonds in oven for a few minutes.
  3. Cut chicken into bite-size pieces.
  4. Add 2 tbsp mayonnaise.
  5. Chop celery, grapes, dill and add to chicken mixture.
  6. Add remaining mayonnaise and slivered almonds, plus salt and pepper to taste.
