Minted Watermelon Salad

- 1 small seedless red watermelon(21/2lbs) shopping list
- 1 small seedless yellow watermelon(21/2lbs) shopping list
- 2 oz. ricotta salata shopping list
- 1/2tsp coarse sea salt shopping list
- 3Tbs slice fresh mint shopping list
How to make it
- Using a sharp knife,cut off rinds for watermelon(should have a total or 2lbs. peeled fruit) Quarter each melon and then cut intp 3" long,1/4" thick slices/ Arrange slices on serving platter.
- Using a vegetable peeler,shave paper-thin slices of ricotta salata over watermelon. Sprinkle with salt and mint,and serve immediately.
