How to make it

  • Using a sharp knife,cut off rinds for watermelon(should have a total or 2lbs. peeled fruit) Quarter each melon and then cut intp 3" long,1/4" thick slices/ Arrange slices on serving platter.
  • Using a vegetable peeler,shave paper-thin slices of ricotta salata over watermelon. Sprinkle with salt and mint,and serve immediately.
