Salmon And Dill In Puff Pastry Recipe

The baker at Shoprite (a local supermarket here on the Isle of Man) and I were talking about cooking and he told me about this great recipe!

Ingredients
  • 8 oz fresh salmon
  • or
  • 1 large can salmon
  • 4 oz sour cream
  • 1 oz fresh chopped or 1 Tbsp dried dill
  • 8 oz roll puff pastry
  • 1 egg, beaten with 2 tsp water

Directions
  1. Preheat oven to 350F.
  2. Grease cookie tray or line with parchment paper.
  3. Roll out puff pastry 1/4 inch thick on a lightly floured board.
  4. Cut into 4 equal rectangles or cut into 4 fish shapes.
  5. Make a 4 small rectangle swith raised edges (see photo).
  6. Place rectangles or 2 fish shapes on baking tray and bake for 5 minutes until pastry begins to become firm.
  7. Remove from oven and layer with salmon.
  8. Mix dill and sour cream, then spread over salmon.
  9. If you are using fish shapes, place the 2 remaining fish shapes on top of the salmon and sour cream.
  10. Brush pastry with beaten egg and water mixture.
  11. Place in oven and bake for 15 minutes or until pastry is golden brown.
  12. Serve topped with a sprig or two of fresh dill.
  13. If you are not artistic with puff pastry you can roll out the puff pastry into 4 squares and make a simple salmon wrap to bake. Be sure to seal the edges and brush with egg mixture.
