I saw this recipe on our local TV station, was invented by Aldo Sandoval (he is a teenager). :)

Ingredients
  • 2 artichokes
  • 1 lemon
  • 1/4 c. olive oil
  • 1/4 c. diced pancetta
  • 1/4 c. minced onion (I left this out)
  • 1/4 c. water or chicken stock (I used chicken stock)
  • 1/8 tsp. (or to taste) red pepper flakes
  • 8 oz. orechiette dried pasta
  • salt and pepper to taste
  • 1 Tbs. chopped fresh parsley
  • 1/2 c. grated Romano cheese

Directions
  1. Clean the artichokes, leaving on the tender parts of the heart; cut them into very thin slices.
  2. Squeeze the lemon juice over them.
  3. Heat olive oil over medium heat and add the pancetta.
  4. Sautee until crisp; add onions and cook for 2 minutes.
  5. Onions should be transparent in color, not browned.
  6. Add the sliced artichokes, water or chicken stock and red pepper flakes.
  7. Cook until the artichokes are tender.
  8. Correct seasoning if needed.
  9. Cook the pasta for about 12 minutes in boiling salt water; drain.
  10. Toss pasta with artichoke sauce, herbs and cheese.
  11. Enjoy! :)
