KAJU KATLI OR CASHEWNUT SWEET

- Cashewnut powder - three and a half cups shopping list
- sugar - one and a half cups shopping list
- water - one and one on three cups shopping list
- Liquid glucose - 2 tbsps shopping list
- ghee - one and a hlaf tbsps shopping list
- Silver varq/foil - as required shopping list
How to make it
- Cook sugar and water till the syrup reaches 118C and you get multi strings. Add liquid glucose, ghee and stir well.
- Remove from heat and add cashew nut powder stirring continuously. If necessary add one tablespoon of water and keep stirring till the temperature comes down to 65C
- Knead completely to make a soft dough. Roll out on a flat greased surface to a one centimetre thickness.
- Rub a butter paper over the surface to smoothen it evenly.
- Apply silve varq and cut into diamond pieces.
- Store in an air- tight containers.
