This is a great home made alternative to store bought ice cream sandwiches. Great fun to make with the kids.

Ingredients
  • Basic Cake Recipe
  • 1 qt. Mint Chocolate Chip Ice Cream

Directions
  1. Heat oven to 350 F.
  2. Mix together your favorite basic cake mix omitting the eggs. It should turn out looking similar to a brownie batter.
  3. Drop by large spoonfuls onto a greased cookie sheet baking for 15min or until cookies are still slightly soft in the middle.
  4. Allow cookies to cool completely.
  5. Take one cookie, place a scoop of ice cream on it and top with a similar sized cookie. Wrap in plastic wrap and push together slightly. Repeat for all cookies.
  6. Freeze for 3hrs. Enjoy!!
  7. Feel free to play with your favorite ice cream flavors!
