Nachinka - Ukranian Cornmeal Casserole Recipe
Given to me by a neighbor, a cross between, polenta, corn pudding quality. Serve with meat and poultry if desired. Unique but delicious spoon bread quality. Some versions even add grated cheese to the recipe

Ingredients
  • 1 medium onion
  • 1/4 lb Butter
  • 1 cup cornmeal
  • 1 tsp sugar
  • 1 tsp salt
  • 1 qt warm milk
  • 4 eggs well beaten
  • 1 tsp baking powder

Directions
  1. Saute chopped onion in butter, do not brown.
  2. Turn heat to low.
  3. Add cornmeal to butter & mix well.
  4. Add the sugar, salt & warm milk.
  5. Stir slowly until cornmeal begins to thicken.
  6. Remove from heat.
  7. Add the eggs & baking powder, mix well.
  8. Pour into a greased 3 qt. casserole.
  9. Bake at 325 degrees F for 1 hour.

This sounds very good. I am wheat intolerant and the fact that this does not have any flour is wanting me to make this even more! Bookmarked!


Thanks for the recipe. I live in a predominantly Ukrainian community, though I'm not Ukrainian myself. Most ot the nachinka around here is not quite so rich. I don't think they use butter, no onions, and they do add nutmeg/allspice sometimes. And of course, most of them don't use recipes!
