  • 1 quart buttermilk
  • 1 tablespoon hot pepper, Hot Shot
  • 1 tablespoon seasoned salt, Jane's Crazy Salt
  • 1 tablespoon granulated garlic
  • 1 cup cornstarch
  • 1 cup potato starch
  • 1 teaspoon xanthan gum
  • 2 teaspoons baking powder
  • 1 tablespoon seasoned salt, Jane's again
  • 1 tablespoon hot pepper, Hot Shot again
  • 1 teaspoon granuated garlic
  • 6 chicken breast halves

Directions
  1. Combine all marinade ingredients and marinate chicken overnight or at least a few hours.
  2. Mix dry ingredients. When chicken has marinated, place dry ingredients in bag, then chicken and shake well to coat, covering completely. Remove breast from bag and place on rack for 20 minutes to set coating.
  3. In the meantime, put canola oil in an electric skillet about an inch up the side. Set control to 375 degrees and bring oil to temperature.
  4. Carefully place each piece of chicken in skillet skin side down. Fry on each side until golden brown. Don't hurry it.
