How to make it

  • Slice eggplant and grilled with olive oil
  • Grilled carrots, celery and onion for 5 minuets
  • Add fish stock and chopped tomato, tomato paste, sugar, salt and pepper and make fire low and cook for 20 minuets add shrimp.
  • While that melt the butter add flour and cook for 1 minute
  • Add milk and put it with mascarpone cheese and mix well
  • Put the filling in a slice of eggplant and roll it
  • Put the cheese sauce and parmesan cheese.
  • Cook in the oven until cheese become golden brown.
