A handy mix for muffins or cakes. To make cakes, just add more sugar.

Hi, to be gluten-free a recipe can not have:
wheat.... barley..... or rye
there s a difference between wheat-free and gluten-free..
i don't mean my above remarks to be taken as a criticism but just as information... being gluten free myself I would love to be able to include barley in my diet !! thank you..
ps your brown recipe looks great... and thank you for including recipes like that..

Thanks for your comment. I really appreciate it. I don't have gluten and dairy allergies, but my daughter-in-law does, so I'm always on the lookout. When I posted this message, one of the 'flours' was blank on my recipe card and I couldn't remember what it was so I inserted barley! My bad! I'll change it - if I can figure out how to do it - still finding my way around this site.

Hello There! I have celiac's disease, and I too have to follow a Gluten Free diet. I tweaked the above recipe with 1 1/4 cup brown rice flour, 1 cup Gluten free Pantry All Purpose Flour, and 1/2 cup coconut gluten free flour. Instead of the sugar I added 1 cup organic unsweetened apple sauce and and 1/3 cup of Xylitol. If I am juicing carrots I will add the pulp to the mixture (1 cup) along with 1 tsp cinnamon, 1 tsp of pumpkin spice, and 1/4 tsp clove, and 1/4 cup chopped Walnuts. Mmmm Good!

Hello, I am not a celiac but do have to eat a gluten free, milk and soy free diet. I suggest for the barley flour a simple substitution of potato flour or potato starch flour would suit the recipe just fine. That I what I am going to try once I get off my you-know-what and do some baking. Must confess that I am not very good at baking since I have never and I mean NEVER have baked before. Any helpful hints are as always appreciated.
