Avocado Tomato and Mushroom Salad

- 2 fresh tomatoes shopping list
- 2 avocados cut in half and peeled shopping list
- 1/3 cup virgin olive oil shopping list
- 12 medium shiitake mushroom caps shopping list
- 1 tablespoon finely minced garlic shopping list
- 1 tablespoon finely minced shallots shopping list
- 1/4 cup red wine vinegar shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Slice tomato and peeled avocado from stem to tip and fan on plates.
- Just before serving heat olive oil in a medium skillet over medium heat.
- Add mushrooms and cook covered for 5 minutes.
- Add garlic, shallots, vinegar and salt then cook covered 1 minute longer.
- Remove mushrooms and arrange over avocado and tomato.
- Give a few turns of the peppermill over each salad as desired.
- Distribute dressing equally on the individual salads.
