Ingredients

How to make it

  • Blend cheeses, milk, sugar, rum, zest, vanilla, and salt in a
  • blender until smooth, about 1 minute.
  • Add cream and blend until just combined, about 5 seconds.
  • Freeze mixture in ice cream maker, then transfer to an airtight
  • container and put in freezer to harden, at least 3 hours.
  • Put scoops of ice cream on watermelon slices and top with chocolate shavings

    Very unique indeed. Next time we get a watermelon I'll have to remember this one. They say in the country, that the best time to buy a watermelon is after the 4th of July. Thanks for sharing!

    The ingredients are so intriguing. I'll have to try this one. I recently became a fan of pairing watermelon with feta cheese, but your ricotta and cream cheese mixture sounds really delicious too! --Like a "canoli cream" sundae! :)
