Baked Goat Cheese With Garden Salad

- 4 slices fresh log chevre 1/2" thick shopping list
- 3 thyme sprigs shopping list
- 1/4 cup olive oil shopping list
- 1 cup fine dried bread crumbs shopping list
- 1 teaspoon dried thyme crushed shopping list
- 2 tablespoons red wine vinegar shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 3 cups mixed salad greens shopping list
- 1 day old baguette shopping list
- 1/2 cup butter melted shopping list
- 2 large garlic cloves split shopping list
How to make it
- Place goat cheese rounds and fresh thyme in shallow pan or dish.
- Sprinkle with 1/4 cup olive oil then marinate up to 1 day.
- Mix bread crumbs and dried thyme then set aside.
- Make dressing with 1/2 cup olive oil, vinegar, salt and pepper then set aside.
- Slice baguette into 24 slices then brush each with some of the melted butter.
- Place on baking sheet and bake at 350 for 7 minutes.
- While still warm rub each crouton with cut clove of garlic.
- Dip marinated cheese slices in bread crumbs then place in lightly oiled baking dish.
- Bake at 400 for 6 minutes.
- Toss salad greens with enough dressing to lightly coat.
- Arrange on 4 salad plates then place cheese in center of plates browned side up.
- Arrange croutons around cheese.
