How to make it

  • Preheat oven to 350 degrees F.
  • place the cookies in a zip lock bag , seal and using a rolling pin crush them into very small pieces.
  • place the crumbs into a bowl and mix with the egg white.
  • arrange 4 nonstick pastry rings or poached egg rings 3-1/2 inches across onto a cookie sheet lined with baking parchment.
  • divide the cookie mixture into 4 equal portions, and spoon it into the rings., pressing down well.
  • bake for 10 minutes, unitl crisp, allow to cool now in the rings....
  • beat together the cheese, almond extract, lind rind, ground almonds,sugar, and raisins until well mixed.
  • dissolve the gelatin in the boiling water and stir in the lime juice;
  • fold into the cheese mixture and spoon over the cookie bases.
  • smooth over the tops and chill for 1- hour or until set.
  • loosen cheesecakes when set from the rings, using a small spatula, and transfer to serving dishes.
  • decorate with toasted almonds and lime rinds and serve .....................yummy.......................
  • serves 4
