These little babies are so good and different if you dont like raisins you can subsitute with finely chopped dried apricots ......or your choice.......

  • 12 - amaretti di saronno cookies
  • 1 - medium - egg white, lightly beaten
  • 8 - ounces skimmed - milk soft cheese ........ (cream cheese)
  • 1/2 - teaspoon almond extract
  • 1/2 - teaspoon finely grated lime rind
  • 1 - ounce ground almonds
  • 1 - ounce superfine sugar
  • 2 - ounces golden raisins
  • 2 - teaspoons powdered gelatin
  • 2 - teaspoons boiling water
  • 2 - tablespoons lime juice
  • ******************************
  • to decorate ;...............................
  • 1 ounce slivered almonds
  • strips of lime rinds

Directions
  1. Preheat oven to 350 degrees F.
  2. place the cookies in a zip lock bag , seal and using a rolling pin crush them into very small pieces.
  3. place the crumbs into a bowl and mix with the egg white.
  4. arrange 4 nonstick pastry rings or poached egg rings 3-1/2 inches across onto a cookie sheet lined with baking parchment.
  5. divide the cookie mixture into 4 equal portions, and spoon it into the rings., pressing down well.
  6. bake for 10 minutes, unitl crisp, allow to cool now in the rings....
  7. beat together the cheese, almond extract, lind rind, ground almonds,sugar, and raisins until well mixed.
  8. dissolve the gelatin in the boiling water and stir in the lime juice;
  9. fold into the cheese mixture and spoon over the cookie bases.
  10. smooth over the tops and chill for 1- hour or until set.
  11. loosen cheesecakes when set from the rings, using a small spatula, and transfer to serving dishes.
  12. decorate with toasted almonds and lime rinds and serve .....................yummy.......................
  13. serves 4
