African Peanut Stew

- 1 tbs olive oil or as needed shopping list
- 1 med red onion chopped shopping list
- 1 med gr pepper chopped shopping list
- 1/2 cup chopped carrot shopping list
- 1/2 cup chopped celery shopping list
- 3 cloves garlic minced shopping list
- 2 tbs fresh minced ginger shopping list
- 1 tbs curry powder shopping list
- 1, 14 oz can diced tomatoes shopping list
- 1 bay leaf shopping list
- 1 1/2 cups shelled edamame ( soybeans )or use snow peas shopping list
- 1 qt vegetable ( or chicken ) broth shopping list
- 1 large sweet potato, diced shopping list
- about 3/4 cup peanut butter shopping list
- 1/4 cup chopped fresh cilantro shopping list
- 1 small bag of baby spinach ( 5 oz ) shopping list
- salt and pepper to taste shopping list
How to make it
- In olive oil, saute onion, pepper, carrot, celery about 5 minutes,
- Add garlic, ginger, curry but do not brown,
- Add tomatoes and bay leaf and cook 3 minutes.
- Add broth and sweet potato and bring to a boil.
- Reduce heat and simmer about 8 minutes.
- Stir in the peanut butter and cook a few more minutes.
- Stir in cilantro and spinach.
- Season to taste
- Garnish with shelled peanuts if desired.
