A good tasting menudo but not authentic

Ingredients
  • 2#s lean pork, cut into 1/2 " diced sqs.
  • 3 onions, chopped
  • 4 cloves garlic,sliced
  • 1 heaping TBS. chili powder
  • 1 TBS. chipotle powder
  • 1/2 tsp. coriander
  • 1 can green chilies, chopped
  • 2 qts. chicken stock
  • 1 #5(large) can hominy,drained
  • salt and pepper to taste

Directions
  1. combine all of the ingerdients in a large soup pot and bring to a boil,reduce heat and simmer for 1-1 1/2 hours, until meat is tender
  2. add water as needed to maintain a soupy mixture
  3. serve with chopped onions ans lime slices
