How to make it

  • Heat the olive oil in a heavy saucepan over medium-high heat.
  • Add the onions and cook until soft, about 5 minutes.
  • Add the garlic and chile powder and cook for another 2 minutes.
  • Add the vinegar, sugar, peaches, reserved peach syrup and cherries.
  • Increase heat and bring to a boil, stirring until the sugar has dissolved.
  • Reduce to a simmer and continue cooking until reduced by half. (this can take a while but worth the wait)
  • Remove from heat and let cool.
  • Puree the cooled sauce in a blender or food processor.
  • Stir in the lime juice.

    I made pork chops last night using this. A HUGE hit (even with the kids) Made some quick chunky apple sauce and rice and called it dinner! You rock!
