Ingredients
  • 2 packages of rice-a-roni chicken flavor
  • 3/4 cup chopped green pepper
  • 8 green onions chopped
  • 16 stuffed olives with pimento sliced
  • 2 6 oz jars marinated artichoke hearts chopped
  • 2/3 cup real mayonnaise
  • 1 teaspoon curry powder (optional.. but it adds alot of flavor)

Directions
  1. cook rice according to package directions omitting the butter and cool
  2. drain artichokes (reserve the liquid) and chop
  3. mix mayo, artichoke liquid, and curry powder in a bowl.
  4. in a large bowl mix rice, pepper, onion, olives, and artichoke pieces.
  5. pour mayo mixture over the rice and veggie mix and toss to mix well.
  6. chill for 4 hours or over night.
