How to make it

  • cook rice according to package directions omitting the butter and cool
  • drain artichokes (reserve the liquid) and chop
  • mix mayo, artichoke liquid, and curry powder in a bowl.
  • in a large bowl mix rice, pepper, onion, olives, and artichoke pieces.
  • pour mayo mixture over the rice and veggie mix and toss to mix well.
  • chill for 4 hours or over night.
