Capellini with Clams and Tomato-Feta Vinaigrette

- 1/2 lb. capellini shopping list
- 1 (10 oz) can whole baby clams, drained shopping list
- 1/4 lb. feta cheese, crumbled shopping list
- 3/4 cup reduced-sodium tomato juice shopping list
- 2 tbsp. white wine vinegar shopping list
- 1 tbsp. extra-virgin olive oil shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. coarsely ground black pepper shopping list
- 3 plum tomatoes, chopped shopping list
- 3/4 cup chopped fresh basil shopping list
- 1/2 cup chopped fresh parsley shopping list
How to make it
- Bring a large pot of salted water to a boil. Add capellini- cook according to package directions. Add the clams for the last 30 seconds of cookin; drain & transfer to large bowl.
- Meanwhile, combine the cheese, tomato juice, vinegar, salt, oil, and pepper in bowl. Pour over pasta and clams. Add the tomatoes, parsley, and basil; toss to combine.
