Black Eye Pea Casserole Recipe

Ingredients

1 lb breakfast sausage

2 cans black eye peas

1/2 red onion chopped

1/2 green bell pepper chopped

1/2 red bell pepper chopped

2 cloves garlic chopped

1/2 hot pepper (choose your favorite)

1Tbsp garlic salt

1 Tbsp ground black pepper

5 eggs

1/2 cup heavy cream

1/2 cup chedder cheese

1/2 cup mozzarella cheese

1/2 tsp hot sauce

Directions

boil black eye peas for 20 min

brown saussage

drain all but 2 Tbsp of grease

remove sausage from pan

put onion and peppers garlic salt and pepper in pan cook until soft

add sausage and peas to pan heat together until most of the liquid is reduced

remove from heat pour into casserole dish

wisk 5 eggs and heavy cream together

mix cheeses together

add 1/2 of the cheese to egg mixture

pour egg and cheese over casserole until all ingredients are covered

place casserole into 350 pre heated oven for 25 min

at 25 min remove casserole cover with the rest of the cheese mixture

return to oven cook for 10 more minutes until cheese is melted and turnning brown

do knife test to be sure it is done (should be clean after inserting into casserole)

I so miss living in the South...I now live in
California...but last lived in Louisiana...
