How to make it

  • boil black eye peas for 20 min
  • brown saussage
  • drain all but 2 Tbsp of grease
  • remove sausage from pan
  • put onion and peppers garlic salt and pepper in pan cook until soft
  • add sausage and peas to pan heat together until most of the liquid is reduced
  • remove from heat pour into casserole dish
  • wisk 5 eggs and heavy cream together
  • mix cheeses together
  • add 1/2 of the cheese to egg mixture
  • pour egg and cheese over casserole until all ingredients are covered
  • place casserole into 350 pre heated oven for 25 min
  • at 25 min remove casserole cover with the rest of the cheese mixture
  • return to oven cook for 10 more minutes until cheese is melted and turnning brown
  • do knife test to be sure it is done (should be clean after inserting into casserole)

    I thought it might be from the South...
    Then I checked your 'Home Page' and I was right..S.C.! I LOVE your recipe

    I so miss living in the South...I now live in
    California...but last lived in Louisiana...
