Cajun Shrimp And Grits Recipe
This is a very nice dish to serve to those who love shrimp and grits. It's got a nice blackened flavor to it and it very tasty, yet not too heavy. Serve with a nice dinner salad and you've got a great lunch or dinner. Enjoy

Ingredients
  • Shrimp and Grits
  • 6 ounces medium shrimp peeled and deveined
  • 2 ounces tomatoes diced
  • 2 ounces mushrooms sliced
  • 1 ounce scallions sliced
  • 2 ounces smoked sausage sliced
  • 6 ounces quick grits cooked
  • 1 teaspoon Cajun or blackening spice
  • 2 ounces pepper jack cheese blend
  • 1 ounce butter
  • 1 teaspoon garlic minced

Directions
  1. Sauté shrimp, garlic and butter then add tomatoes, mushrooms and scallions.
  2. Continue sautéing then add sausage and seasoning.
  3. Spoon grits onto plate then sprinkle with half the cheese then top with shrimp mixture.
  4. Sprinkle remaining cheese on top and serve immediately.
