Marinated Dried Tomatoes Recipe
Make your own marinated dried tomatoes. More fun and probably cheaper! I dry my own roma tomatoes and use dried herbs from the herb garden.

Ingredients
  • 2 cups (about 6 ounces) dried tomatoes
  • Boiling water
  • 2 tablespoons pine nuts
  • 2/3 cup good quality olive oil
  • 2-3 cloves garlic, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon salt
  • 2 tablespoons balsamic vinegar

Directions
  1. Combine tomatoes with enough boiling water to cover
  2. Set aside for 20-40 minutes until soft.
  3. Drain and pat dry.
  4. Place in a 2 cup container with lid.
  5. In a large skillet, toast pine nuts over medium heat until golden. (Watch these closely so they don't burn.)
  6. Transfer to container with tomatoes.
  7. In same skillet, heat olive oil.
  8. Add garlic and cook until just lightly browned.
  9. Remove from heat and stir in herbs and salt.
  10. Pour over tomato mix.
  11. Add balsamic vinegar, cover, and shake gently to blend.
  12. Store in refrigerator for up to 2 weeks.
