Marinated Dried Tomatoes

- 2 cups (about 6 ounces) dried tomatoes shopping list
- boiling water shopping list
- 2 tablespoons pine nuts shopping list
- 2/3 cup good quality olive oil shopping list
- 2-3 cloves garlic, finely chopped shopping list
- 1 teaspoon dried oregano shopping list
- 1 teaspoon dried basil shopping list
- 1/4 teaspoon salt shopping list
- 2 tablespoons balsamic vinegar shopping list
How to make it
- Combine tomatoes with enough boiling water to cover
- Set aside for 20-40 minutes until soft.
- Drain and pat dry.
- Place in a 2 cup container with lid.
- In a large skillet, toast pine nuts over medium heat until golden. (Watch these closely so they don't burn.)
- Transfer to container with tomatoes.
- In same skillet, heat olive oil.
- Add garlic and cook until just lightly browned.
- Remove from heat and stir in herbs and salt.
- Pour over tomato mix.
- Add balsamic vinegar, cover, and shake gently to blend.
- Store in refrigerator for up to 2 weeks.
