How to make it

  • Combine tomatoes with enough boiling water to cover
  • Set aside for 20-40 minutes until soft.
  • Drain and pat dry.
  • Place in a 2 cup container with lid.
  • In a large skillet, toast pine nuts over medium heat until golden. (Watch these closely so they don't burn.)
  • Transfer to container with tomatoes.
  • In same skillet, heat olive oil.
  • Add garlic and cook until just lightly browned.
  • Remove from heat and stir in herbs and salt.
  • Pour over tomato mix.
  • Add balsamic vinegar, cover, and shake gently to blend.
  • Store in refrigerator for up to 2 weeks.
