Applesauce Cake With Icing Recipe
This is a cake that I inherited in 1980 when I inherited the family collection that dates back to the mid-1800's. This was my Aunt Ludie's recipe and always a hit when I make this for family or friends. Enjoy

Ingredients
  • 1/2 cup butter
  • 1 cup packed brown sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 1- 3/4 cup flour
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup raisins
  • 1/2 cup pecans
  • 1 cup applesauce
  • Icing:
  • 4 tablespoons butter
  • 1-1/2 teaspoons vanilla
  • 3 cups powdered sugar
  • 5 tablespoons heavy cream

Directions
  1. Heat oven to 350.
  2. Cream butter and sugar together then add egg and vanilla.
  3. Sift dry ingredients together and stir into butter mixture.
  4. Add raisins and pecans then stir in applesauce.
  5. Pour into greased cake pan and bake 45 minutes.
  6. Mix icing ingredients together and spread over sides and top of cake.
