Classic Italian Ricotta Pie Recipe
This basic recipe for Ricotta Pie is a CLASSIC during Easter or any time of the year. Perfect blend of sweet/savory. My family has been eating it since I can remember!

Ingredients
  • 3 pounds Ricotta
  • 10 eggs
  • 1 tablespoon vanilla
  • 1 cup sugar

Directions
  1. Preheat oven to 350 degrees. Mix all the ingredients in a large bowl with an electric mixer for about 3 minutes until everything is mixed well.
  2. Pour into a spring pan 7 inches or 10 inches in size. Bake for 45 minutes to 1 hour, depending on the size of your pan. Pie is done when its set in the middle and it passes the clean toothpick test.
  3. Let stand until cool and release spring.
  4. You can grate lemon peel and/or orange peel on the pie. Powderd sugar also works nice. I like to put pineapple slices on top. Also, putting half a can of drained pineapple chunks in the batter before cooking makes this pie a treat during the spring. Try other easy alterations like cinnamon or nutmeg. You can't mess this up! :)
