Classic Italian Ricotta Pie

- 3 pounds Ricotta shopping list
- 10 eggs shopping list
- 1 tablespoon vanilla shopping list
- 1 cup sugar shopping list
How to make it
- Preheat oven to 350 degrees. Mix all the ingredients in a large bowl with an electric mixer for about 3 minutes until everything is mixed well.
- Pour into a spring pan 7 inches or 10 inches in size. Bake for 45 minutes to 1 hour, depending on the size of your pan. Pie is done when its set in the middle and it passes the clean toothpick test.
- Let stand until cool and release spring.
- You can grate lemon peel and/or orange peel on the pie. Powderd sugar also works nice. I like to put pineapple slices on top. Also, putting half a can of drained pineapple chunks in the batter before cooking makes this pie a treat during the spring. Try other easy alterations like cinnamon or nutmeg. You can't mess this up! :)
