Grilled Vegetables with Balsamic Vinaigrette

- 1/4 cup balsamic vinegar shopping list
- 2 Tbsp. honey shopping list
- 1 Tbsp. olive oil shopping list
- 1 tsp. coarsely ground black pepper shopping list
- 1/2 tsp. salt shopping list
- 4 cloves garlic, crushed shopping list
- 4 grape tomatoes, halved shopping list
- 2 zucchini squash, cut lengthwise into 1/4" slices shopping list
- 1 lb. eggplant, cut crosswise into 1" thick slices shopping list
- 1 red bell pepper, cut into 8 wedges shopping list
- 1 onion, cut into 2" thick wedges shopping list
- 1 small bunch kale shopping list
- cooking spray shopping list
How to make it
- Combine first 6 ingredients in a bowl.
- Combine tomatoes and next 5 ingredients,( tomatoes through kale) in a bowl.
- Divide vinaigrette and vegetable mixture evenly between 2 large zip-top plastic bags, seal.
- Marinate in refrigerator 1 hour, turning bags occasionally.
- Remove vegetables from bags, reserving marinade.
- Prepare grill.
- Place vegetables on grill rack coated with cooking spray.
- Grill 7 minutes on each side or until onions is tender, basting with marinade.
