  • Steak Pinwheels:
  • 1 @ 1-1/2 lbs. flank steak
  • salt and pepper
  • 3 jarred roasted bell peppers
  • 20 fresh basil leaves
  • 1/2 lb. fresh mozzarella, sliced 1/4 inch thick
  • 1/4 cup EVOO (extra-virgin olive oil)
  • 4 wooden skewers
  • Herbed Yellow Squash (linebb956):
  • 2 pounds crookneck yellow squash
  • Boiling water or steamer
  • 4 tablespoons butter
  • 2 teaspoons FRESH lemon juice
  • salt and pepper to taste
  • fresh sweet basil... a nice hand full sliced

Directions
  1. Steak Pinwheels:
  2. Soak 4 wooden skewers in water. Pre-heat grill to medium.
  3. Lay the steak flat on a work surface and season with salt and pepper. Split the roasted peppers and lay flat on the meat, leaving a 1-inch border at both short ends.
  4. Layer the basil and mozzarella on top; season with salt and pepper. Roll up the steak, beginning with a short end, and secure with the skewers, pushed all the way through and evenly spaced apart. Cut the roll crosswise, between the skewers, into 4 equal pinwheels. Lay each one flat.
  5. Drizzle the cut sides of each pinwheel with the olive oil; season with salt and pepper.
  6. Grill, covered, turning once, for about 6 minutes.
  7. Herbed Yellow Squash (linebb956):
  8. Either steam or boil your squash until JUST tender... do not over cook
  9. While that is doing...
  10. Melt butter and stir in lemon juice, salt and pepper.
  11. Drain squash if boiled put in warmed serving dish toss with fresh basil and butter...
  12. Taste, adjust seasonings if needed.
  13. Just simple and good..
