This is a close tie to the Pepperidge farm version but the cookie is a delicious lemon with an extremely smooth texture and a rich chocolate center filling.

Ingredients
  • 12 Tablespoons butter softened
  • 2 1/2 cups powdered sugar
  • 6 egg whites
  • 2 Tablespoons vanilla extract
  • 2 Tablespoons lemon extract
  • 1 1/2 cups flour
  • Cookie filling:
  • 1/2 cup heavy cream
  • 8 ounces semisweet or milk chocolate pieces

Directions
  1. Cream the butter
  2. Mix in sugar
  3. Add egg whites gradually
  4. Then mix in the vanilla and lemon extracts
  5. Add the flour and mix until incorporated
  6. Pour batter into a large plastic bag seal and cut the tip off
  7. Make 1 inch sections of batter on parchment lined baking pans
  8. Make sure they are at least 2 inches apart
  9. Bake at 350 degrees for 7 to 10 minutes
  10. Just until the edges are turning a golden brown'
  11. Let them cool on the pan
  12. Cookie filling
  13. In a small saucepan scald the cream
  14. Pour hot cream over the chocolate in the bowl
  15. Whisk to melt, set to cool, it will thicken
  16. Spread a thin amount of filling on the flat side of the cookie
  17. While the filling is still soft, press the flat side of second cookie to it
  18. Repeat with the remainder of the cookies
