How to make it

  • Cream the butter
  • Mix in sugar
  • Add egg whites gradually
  • Then mix in the vanilla and lemon extracts
  • Add the flour and mix until incorporated
  • Pour batter into a large plastic bag seal and cut the tip off
  • Make 1 inch sections of batter on parchment lined baking pans
  • Make sure they are at least 2 inches apart
  • Bake at 350 degrees for 7 to 10 minutes
  • Just until the edges are turning a golden brown'
  • Let them cool on the pan
  • Cookie filling
  • In a small saucepan scald the cream
  • Pour hot cream over the chocolate in the bowl
  • Whisk to melt, set to cool, it will thicken
  • Spread a thin amount of filling on the flat side of the cookie
  • While the filling is still soft, press the flat side of second cookie to it
  • Repeat with the remainder of the cookies
