Chicken parmesean wpotatoes

- 4 boneless chicken breast shopping list
- 4 medium potatoes shopping list
- 1/2 C. paremsen cheese shopping list
- 1/2 C. bread crumbs shopping list
- 2 Tbl dried parsley or to taste. (It's mainly for color anyway.) shopping list
- 1/4 C. olive oil shopping list
- 2 Tbl butter or marg. shopping list
How to make it
- Peel potatoes cut up in to medium sized cubes as if for mashing.
- Boil till tender w/salt & pepper to taste.
- Set aside, reserve liquid.
- Mix parmesen, bread crumbs, & parsley in gallon size zip lock bag.
- Heat oil & butter in large skilet.
- Toss each chicken breast in breadcrumb mixture to coat.
- Fry till browned on both sides in hot oil.
- Add cooked potatoes to pan, sprinkle remaining breadcrumb mixture over chicken & potatoes.
- Add approx 1to 1&1/2 cups of reserved potato water to mixture. The more you add the juicer the resulting dish will be. (my family likes it very juice.)
- Cover & cook approx 30 more minutes or until chicken is cooked through.
- Serve W/choice of vegitable.
