How to make it

  • Peel potatoes cut up in to medium sized cubes as if for mashing.
  • Boil till tender w/salt & pepper to taste.
  • Set aside, reserve liquid.
  • Mix parmesen, bread crumbs, & parsley in gallon size zip lock bag.
  • Heat oil & butter in large skilet.
  • Toss each chicken breast in breadcrumb mixture to coat.
  • Fry till browned on both sides in hot oil.
  • Add cooked potatoes to pan, sprinkle remaining breadcrumb mixture over chicken & potatoes.
  • Add approx 1to 1&1/2 cups of reserved potato water to mixture. The more you add the juicer the resulting dish will be. (my family likes it very juice.)
  • Cover & cook approx 30 more minutes or until chicken is cooked through.
  • Serve W/choice of vegitable.
