Chicken Parmesean Wpotatoes Recipe

Ingredients
  • 4 boneless chicken breast
  • 4 medium potatoes
  • 1/2 C. paremsen cheese
  • 1/2 C. bread crumbs
  • 2 Tbl dried parsley or to taste. (It's mainly for color anyway.)
  • 1/4 C. olive oil
  • 2 Tbl butter or marg.

Directions
  1. Peel potatoes cut up in to medium sized cubes as if for mashing.
  2. Boil till tender w/salt & pepper to taste.
  3. Set aside, reserve liquid.
  4. Mix parmesen, bread crumbs, & parsley in gallon size zip lock bag.
  5. Heat oil & butter in large skilet.
  6. Toss each chicken breast in breadcrumb mixture to coat.
  7. Fry till browned on both sides in hot oil.
  8. Add cooked potatoes to pan, sprinkle remaining breadcrumb mixture over chicken & potatoes.
  9. Add approx 1to 1&1/2 cups of reserved potato water to mixture. The more you add the juicer the resulting dish will be. (my family likes it very juice.)
  10. Cover & cook approx 30 more minutes or until chicken is cooked through.
  11. Serve W/choice of vegitable.
