How to make it

  • Pack the mango into a 1 quart jar.
  • Combine the sugar, ginger, chilies, garlic, salt and pepper in a saucepan and simmer until the sugar melts.
  • Remove from heat, and stir in the vinegar.
  • Pour over the mango slices and cool to room temperature.
  • Refrigerate and let sit for at least a couple days before enjoying.
