Mango Pickle

- 1 large firm mango, peeled and slived 3/4" thick shopping list
- 1/4 c sugar shopping list
- 10 thin slices fresh ginger shopping list
- 2 dried red chilies, sliced at the tip shopping list
- 1 garlic clove, halved lengthwise shopping list
- 1/2 tsp coarsely cracked black peppercorns shopping list
- 1/2 tsp salt shopping list
- 1/4 c. white wine vinegar shopping list
How to make it
- Pack the mango into a 1 quart jar.
- Combine the sugar, ginger, chilies, garlic, salt and pepper in a saucepan and simmer until the sugar melts.
- Remove from heat, and stir in the vinegar.
- Pour over the mango slices and cool to room temperature.
- Refrigerate and let sit for at least a couple days before enjoying.
