Peanut Butter Scallops Recipe

Ingredients
  • 1 lb. scallops (I like sea scallops, cook less time for bay scallops)
  • 1/2 cup smooth peanut butter
  • 1/4 cup finely diced onion
  • 2-3 tbs sage (or for more flavor, Bell's Seasoning)
  • 1/4 cup butter or margarine
  • 1/2 cup white wine

Directions
  1. Wash your scallops really, really well.
  2. Pam or butter 9x9x1 pyrex dish
  3. Distribute scallops in pyrex.
  4. Combine white wine and peanut butter in blender, mixer or as well as possible by hand.
  5. Cover scallops in this order: White wine and peanut butter mixture, then butter(spray-on margarine works well), then diced onion, then sage (or Bell's).
  6. Broil on high for 10 minutes, don't overcook, but make sure center is warm for safety reasons.
  7. Suggestion: Wrap in bacon for appetizer, or serve as side with garden salad or rice pilaf for main course.

This does not sound good at all. But since I just bought 3 lb of bay scallops I'm going to make these just because it doesn't sound good which usually means it will be awesome.


Is that dry or sweet white wine?
