Greek Style Mushrooms

- 1 pound button mushrooms shopping list
- 1 cup water shopping list
- 1/2 cup olive oil shopping list
- 2 tablespoons lemon juice shopping list
- 2 garlic cloves minced shopping list
- 1 tablespoon celery seed shopping list
- 1 tablespoon white vinegar shopping list
- 1 bay leaf crushed shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon fennel seed shopping list
- 1/4 teaspoon oregano shopping list
- 1/4 teaspoon whole black pepper slightly crushed shopping list
How to make it
- Clean mushrooms and remove just the soiled end of the stem then set aside.
- Combine remaining ingredients in a microwave casserole dish.
- With microwave on high cook 6 minutes the remove and cover with plastic wrap.
- Allow to rest 5 minutes then stir in mushrooms.
- Return to microwave uncovered and cook on medium for 3 minutes stirring every 60 seconds.
- Chill at least 24 hours before serving.
- To serve remove mushrooms with a slotted spoon and place on a bed of parsley of endive.
