Coconut Beer Shrimp Recipe

Ingredients
  • 1 tablespoon ground red pepper
  • 1 teaspoon salt
  • 1-1/2 teaspoons sweet paprika
  • 1-1/2 teaspoons freshly ground black pepper
  • 1-1/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon thyme
  • 3/4 teaspoon oregano
  • Sauce:
  • 1 pound orange marmalade
  • 5 tablespoon brown mustard
  • 5 tablespoon horseradish
  • Shrimp and Batter:
  • 2 eggs
  • 1-3/4 cup flour
  • 3/4 cup beer
  • 1 tablespoon baking powder
  • 48 medium shrimp peeled with tails
  • 3 cups unsweetened grated coconut

Directions
  1. Combine seasoning mix together in a bowl.
  2. Stir dipping sauce ingredients together in a second bowl.
  3. Have this ready at the table when the shrimp are done.
  4. Mix 2 teaspoons seasoning mix, 1-1/4 cup flour, beer and baking powder.
  5. Place this in a third bowl.
  6. Combine remaining flour with another 2 teaspoons of the seasoning mix.
  7. Coat each shrimp with remaining seasoning mix.
  8. Dip in flour mixture then in batter then in coconut.
  9. Deep fry shrimp for 1 minute and drain on paper towels.
