Brownie Roll - Out Cookies

- 5 oz silken, low-fat tofu shopping list
- 1 tbsp vanilla extract shopping list
- 2 cups flour shopping list
- 1 cup barley flour shopping list
- 2/3 cup unsweetened cocoa, sifted shopping list
- 1/2 tsp fine salt shopping list
- 1/2 tsp baking powder shopping list
- 1 cup margarine, softened shopping list
- 1 cup sugar shopping list
How to make it
- Preheat oven to 350F and line baking sheets with parchment.
- Puree tofu and vanilla in a food processor until smooth. Set aside.
- Whisk flours, cocoa, salt, and baking powder in bowl.
- Cream margarine and sugar until fluffy.
- Beat in tofu mixture until smooth.
- Gradually add flour mixture, and mix until smooth. Wrap in plastic and chill one hour.
- Roll out on a floured counter about 1/4" thick, and cut into shapes.
- Bake 10-11 minutes, or until the edges are firm and the centers are slightly soft and puffed.
- Cool 3 minutes on sheets, then transfer to a wire rack to cool completely.
