These Pumpkin & Black Bean Burritos are surprisingly VERY filling and the pumpkin/bean/onion mixture is very good reheated for lunch the next day, too!

Ingredients
  • 1 cup cubed raw pumpkin, diced into 1cm cubes
  • 1 cup canned black beans
  • 2 green oinions
  • 1 teaspoon olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili flakes
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon Adobo seasoning
  • 2 flour tortillas or wraps
  • salsa and/or shredded cheese (optional)

Directions
  1. Simmer the diced pumpkin for ten minutes or until soft, and drain.
  2. Drain and add black beans.
  3. Finely chop the green onions and sautee in olive oil until translucent.
  4. Add pumpkin, black beans, and spices and cook on medium heat, stirring constantly for 2-3 minutes. If it starts to stick, add a tablespoon or two of water to the pan to keep everything moving.
  5. Spoon onto tortillas.
  6. Serve with salsa and cheese as desired.

Pumpkin and black beans are two of favorites, however, I would have never thought of mixing them in the same dish. You really have my interest up here! I am going to have to try this. It sounds really good. And I know that fresh pumpkin tastes totally different than canned pumpkin. Thanks for the idea!
