Mango Cupcakes

- 1 1/4 cup self rising flour shopping list
- 1 tsp. baking powder shopping list
- 3/4 cup sugar shopping list
- 1/2 cup butter at room temperature shopping list
- 2 eggs shopping list
- 2 tbsp. milk (if the mixture is a bit dry) shopping list
- 2/3 cup diced mangos or you can use mango puree shopping list
- ------Mango Whipped Cream----- shopping list
- 1 cup heavy whipping cream, chilled shopping list
- 2/3 cup mango puree shopping list
- 1/3 cup sugar shopping list
How to make it
- Preheat oven to 350. Line your muffin pan with cupcake liners
- Cream the butter and slowly add the sugar and cream until the sugar are dissolved.
- Add the egg, one at a time into the mixture and beat well.
- In another bowl, measure the flour and the baking powder.
- Slowly pour into the wet mixture and mix well. Then add the diced mangos
- Pour into pan and bake for about 20 min. or depends on your oven temperature.

- Mango Whipped Cream
- Beat whipping cream on medium speed for about five minutes, until soft peaks form.
- Add sugar.
- Cut up your mango, being sure to remove all skin. Then, use a food processor or blender to puree the mango
- Add the mango to the whipped cream.
- Be sure to keep refrigerated.
- Assembly
- I basically put a dalloped of the mango whipped cream on the cupcake and then another tiny dallop of the leftover mango puree. Serve immediately. I wouldn’t recommend leaving these around unless they’ll be eaten right away because the whipped cream will melt.
