  • ------Mango Cupcakes--------
  • 1 1/4 cup self rising flour
  • 1 tsp. baking powder
  • 3/4 cup sugar
  • 1/2 cup butter at room temperature
  • 2 eggs
  • 2 tbsp. milk (if the mixture is a bit dry)
  • 2/3 cup diced mangos or you can use mango puree
  • ------Mango Whipped Cream-----
  • 1 cup heavy whipping cream, chilled
  • 2/3 cup mango puree
  • 1/3 cup sugar

Directions
  1. Preheat oven to 350. Line your muffin pan with cupcake liners
  2. Cream the butter and slowly add the sugar and cream until the sugar are dissolved.
  3. Add the egg, one at a time into the mixture and beat well.
  4. In another bowl, measure the flour and the baking powder.
  5. Slowly pour into the wet mixture and mix well. Then add the diced mangos
  6. Pour into pan and bake for about 20 min. or depends on your oven temperature.

  8. Mango Whipped Cream
  9. Beat whipping cream on medium speed for about five minutes, until soft peaks form.
  10. Add sugar.
  11. Cut up your mango, being sure to remove all skin. Then, use a food processor or blender to puree the mango
  12. Add the mango to the whipped cream.
  13. Be sure to keep refrigerated.
  14. Assembly
  15. I basically put a dalloped of the mango whipped cream on the cupcake and then another tiny dallop of the leftover mango puree. Serve immediately. I wouldn’t recommend leaving these around unless they’ll be eaten right away because the whipped cream will melt.

Alterations


I recommend using mango puree for the mango cupcakes as well as the whipped cream frosting. I think the diced mangos are good for texture, but bland for the cupcake as a whole.


the best way to pick a ripe mango is with touch and smell. you can gently press the mango and it feels a bit soft and smells like a mango then it's ready to be use.
