How to make it

  • Wipe mushrooms with damp cloth then trim off bottom and cut into halves lengthwise.
  • Combine oil, vinegar, juice, salt, Tabasco, thyme and water.
  • Bring to boil and simmer 5 minutes to blend flavors.
  • Add mushrooms to boiling liquid then cook slowly for 5 minutes.
  • Sprinkle with chopped parsley then chill and drain before serving.
