Potato-Bacon Quiche

- 8 oz bacon, cooked & crumbled shopping list
- 2 lg potatoes, peeled & cubed shopping list
- 1/4 c chopped onion shopping list
- 1/4 c chopped bell pepper shopping list
- 1 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 3 eggs shopping list
- 1 c Swiss or cheddar cheese, grated shopping list
- 1 c milk shopping list
- 1/4 c biscuit mix shopping list
- 2 tbsp butter, melted shopping list
How to make it
- 1. Cook bacon in skillet until browned and crisp. Remove bacon and drain on paper towel.
- 2. Pour off all but 4 tablespoons bacon fat from skillet. Cook potatoes, onion, bell pepper in bacon fat until potatoes are tender, but not mushy, about 15 minutes. Remove from heat and stir in bacon.
- 3. Beat together eggs, cheese, milk, baking mix, butter, salt, and pepper. Pour egg mixture into greased quishe dish deep dish pie plate. Spoon potato mixture on top of eggs.
- 4. Bake at 375 degrees for 20-30 minutes or until set. To serve, sut into wedges.
