Gluten Free Onion Crackers Recipe
Garbanzo bean flour and onion combine to make a flavorful cracker. Easy to make, they keep well and can be made ahead for parties. Another great recipe from The Gluten Free Gourmet Cookbook.

  • 1/2 cup garbanzo bean flour or light bean flour
  • 1/2 cup sweet rice flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 3/4 teaspoon paprika
  • 1/2 teaspoon xanthan gum
  • 2 teaspoons sugar
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1 tablespoon grated onion
  • 2 tablespoons water

Directions
  1. Preheat oven to 325 degrees.
  2. In a medium bowl, blend together the flours, baking powder, salt, paprika, xanthan gum and sugar.
  3. Cut in the butter and oil until the mixture feels like coarse crumbs. Add the onion and water and stir into a ball.
  4. If too dry, add extra water by the teaspoonful.
  5. Place ball on oiled foil the size of a baking sheet. roll 1/8" thick, using plastic wrap over the dough to prevent it from sticking. Slide the foil onto a baking sheet and score into 1 1/4" squares.
  6. Prick with a fork.
  7. Bake for 12 to 15 minutes or until lightly browned.
  8. Remove from oven and allow to cool before breaking into crackers.
  9. Makes 4 dozen
