Garlic and Onion Bruschetta

- * 6 or 7 ripe plum tomatoes (about 1 1/2 lbs) shopping list
- * 3 cloves garlic, minced shopping list
- * 1/2 medium red onion chopped shopping list
- * 1 Tbsp extra virgin olive oil shopping list
- * 1 teaspoon balsamic vinegar shopping list
- * 7 fresh basil leaves, chopped. shopping list
- * salt and freshly ground black pepper to taste shopping list
- * 1 baguette of bread (your choice, i like french) shopping list
- * 1/4 cup olive oil shopping list
How to make it
- preheat oven to 450 degrees
- peel the tomatoes ( you can do this by boiling them for a short time)
- remove juice and seeds from tomatoes
- chop tomatoes,and add to a bowl. Combine garlic, 1tbsp of extra virgin olive oil, vinegar and basil.
- slice baguette into about 1/2 inch thick slices
- coat each side of bread with olive oil (use a brush)
- toast break on top rack of oven for about 5 minutes
- take bread pieces out and put tomato mixture on top
