  • BUY 4 CINNAMON FLAVOURED WHEAT BUNS OR DIY .
  • ........................................................................................................
  • FOR MAKING THE BUN :
  • 15 g butter
  • 1/4 C milk
  • 5 g yeast
  • 1 pinch salt
  • 2 teaspoons sugar
  • 3/4 C wheat flour
  • 1 teaspoon cardamom , grounded
  • 1/4 cup egg, beaten
  • .......................................................................
  • FILLING :
  • 70 g almond paste
  • 1 tbsp milk
  • 1/2 C heavy cream
  • 3 tbsp caster sugar
  • 1 tbsp icing sugar

Directions
  1. BUY 4 CINNAMON FLAVOURED WHEAT BUNS OR DIY .
  2. ........................................................................................................
  3. FOR MAKING THE BUN :
  4. Melt the butter in a saucepan .
  5. Microwave the milk until lukewarm .
  6. Mix the yeast in a bowl with a little of the warm butter/milk until the yeast is completely dissolved .
  7. Add the rest of the butter/milk , salt, sugar, cardamom and most of the flour
  8. Make into a smooth ball dough .
  9. Allow the dough to rise under a baking cloth for 30 minutes.
  10. Sprinkle remaing flour over a baking board and place the dough there.
  11. Make 4 buns by cupping your hand and rolling the dough on the board .
  12. Leave on a baking tray and let it satnd for another 30 mins .
  13. Preheat the oven to 200 deg
  14. Brush the buns with the beaten egg and bake them for about 10 minutes .
  15. Let it on a rack .

  17. ASSEMBLING :
  18. Cut the tops off each bun . Save it .
  19. Scoop the inside of the bun out and put it in a bowl .
  20. Add in the bowl almond paste and milk .
  21. Mix it into a soft mixture .
  22. Divide the mixture into 4 portions and put it back into the buns.
  23. Whip the cream with caster sugar till the peaks form .
  24. Put a large dollop in all 4 buns .
  25. Put the cut off tops on the buns and dust with icing sugar over ‘semlona’.
  26. Serve with warm milk , traditional way or with tea / coffee .
  27. Once assembled , consume within the same day .
